Panko-Parm Cod with Bean & Cherry Tomato Pasta
This is the ultimate weeknight dinner: flaky, golden pan-fried cod served over a glossy, rich cherry tomato and white bean pasta. It is simple, fast, and restaurant-quality.
Ingredients:
* Fish: 2 cod fillets, 1/2 cup panko, 1/4 cup grated Parmesan, salt, and pepper. 2 eggs and some fresh parsley, plus 1/4 cup all-purpose flour.
* Pan Fry: 1/4 cup olive oil + 1 knob of butter.
* Pasta & Sauce: 8 ounces pasta, 4 tablespoons olive oil, half a white onion chopped, 1 red chilli pepper and 2 minced cloves of garlic, 1 pint cherry tomatoes, 1 can (340ml ) white beans, cannellini or butter beans, fresh basil, and 1 teaspoon tomato paste. Salt and pepper to taste.
Step-by-Step:
Prepare the Fish:
* Pat the cod dry.
* Season with salt and pepper.
* Press the cod firmly into the flour, then coat in the eggs, then in a mixture of panko, Parmesan, and parsley to form a thick crust.
* Cook the pasta in salted water until al dente.
* Reserve a cup of pasta water.
Sear the Cod:
* Heat olive oil and a knob of butter in a skillet over medium-high heat.
* Fry the cod on one side for 3–4 minutes until deeply golden.
* Flip gently and cook 2–3 minutes more until golden and flaky.
* Remove, sprinkle with salt, and set aside. Keep warm.
Build the Sauce:
* In the sauce pan, add 4 tablespoons of olive oil and sauté the onions for 5 minutes on low heat with a pinch of salt until softened. Add the garlic and red chilli and cook for 30 seconds. Toss in some fresh basil.
* Toss in the cherry tomatoes and season with salt, pepper, and more fresh basil.
* Cook for 5 minutes until they burst and become jammy.
* Stir in the beans and the tomato paste. Simmer for a few minutes and then add in the pasta cooked al dente.
* Pour in a splash of pasta water to create a glossy sauce.
* Finish cooking the pasta in the sauce for about a minute.
Serve:
* Plate the silky tomato-bean pasta and nestle the crispy crusted side on the side. Squeeze some lemon over the cod and top the pasta with some Parmesan Reggiano cheese.
