Chicken Marinade
For 5 pounds of chicken thighs:

3 tbsp ají amarillo paste
2 tbsp ají rocoto paste
2 tsp kosher salt
2 tsp paprika
1 tsp red pepper flakes
2 tsp garlic powder
1 tsp black pepper
2 tsp ground cumin
⅓ cup soy sauce


Jalapeño Green Sauce

2–3 jalapeños (adjust for heat)
1 bundle fresh cilantro
2–3 garlic cloves
½ cup Greek yogurt
½ cup Mayo or Sour Cream
2–3 tbsp olive oil
2-3 tbsp Aji Amarillo Paste (optional)
Salt, to taste
Black pepper, to taste
