ROASTED CHICKEN & SPICY SHRED SAUCE
If you want to make some exceptional chicken, this is one of the best juiciest ways to make chicken at home. Quite amazing on its own, but even better with my spicy shred sauce. You can serve this as is, with some rice or veggies, quinoa or couscous, or if you’re lowcarb or trying to get more protein, my high protein @kaizenfoodco rice.
Here’s how I made it (makes 4 servings)
1.Add 1.5lb skin-on bone-in chicken thighs to a bowl. You can always remove the skin later, or eat with the skin. Your call.
2.Drizzle with 1 tsp olive oil and season with salt & pepper, 1.5 tbsp garlic or onion powder, 1 tbsp smoked paprika, 1 tbsp oregano, & 1/4 to 1/2 tsp cayenne pepper.
3.To make these crispier, the cooking hack is to add 1 tbsp baking powder. Make sure you mix really well, and ideally let sit to come up to room temp before you roast or air fry.
4.Lay the chicken out on a sheet pan (lined, so the air goes underneath the chicken) and pop in the oven at 400F. You can also air fry at 400F for 23-25 mins on first side, flip, then 5 mins on other side
5.For the sauce, in a small food processor, process 1/2 cup Greek yogurt, 2-3 tbsp mayo, 2 scallions, 2 large handful fresh cilantro, 1/2 jalapeño (seeds removed if preferred), juice of 1.5 limes, some paprika or chipotle powder & couple pinches salt. Taste it & adjust as you like!
If you make this, be sure to let me know on SHREDHAPPENS!
ENJOY!
