Smothered King Oyster Mushroom Steaks

Ingredients

Mushroom Steaks

3 large king oyster mushrooms
Avocado oil
Onion powder
Garlic powder
Black pepper
Poultry seasoning
Smoked paprika

Umami Onion Gravy

2 tbsp all-purpose flour
1 tbsp plant butter
1 small onion, diced
2 cloves garlic, crushed or minced
2–3 cups vegetable broth (add as needed)
1 tbsp liquid aminos
½ tsp vegan Worcestershire sauce
1 tsp white miso paste
1 tsp Dijon mustard
1 tbsp mushroom powder
Onion powder
Garlic powder
Black pepper
Salt, to taste
Fresh thyme sprigs
1 tbsp dried parsley flakes
Directions

Trim the ends from the king oyster mushrooms and slice them lengthwise into thick “steaks.” Lightly score both sides.
Brush both sides with avocado oil, then season generously with onion powder, garlic powder, black pepper, poultry seasoning, and smoked paprika.
Heat a cast-iron skillet with avocado oil. Cook the mushroom steaks for 3–4 minutes per side until deeply browned. Remove and set aside.
In the same skillet, sprinkle in the flour and cook for 1–2 minutes, scraping up the flavorful browned bits.
Stir in the plant butter. Once melted, add the diced onion and cook until tender. Add the garlic and cook for about 30 seconds.
Slowly whisk in the vegetable broth, adding a little at a time until the gravy reaches your desired consistency.
Stir in the liquid aminos, vegan Worcestershire sauce, miso paste, Dijon mustard, mushroom powder, onion powder, garlic powder, black pepper, and salt to taste.
Add the fresh thyme and parsley flakes. If the gravy becomes too thick, stir in a little more vegetable broth.

Return the mushroom steaks to the skillet, reduce the heat to low, and simmer for 10 minutes, allowing the mushrooms to soak up all that delicious gravy.

Serve over mashed potatoes, rice, or with your favorite vegetables.
