$5 to make this dinner for 4 people that's also got about 20g of fiber and 25g of protein per serving! This is meatless as written but you can absolutely add any cooked and chopped meat that you love!

I got 3 Ibs of sweet potatoes for $2.09, avocado for 54¢, black beans for 85¢, and then just used the cheese and other toppings had on hand.

This is one of the most delicious budget meals I’ve ever had and I'll make it as often as possible!

My kids LOVE this dish too and I feel good because they're getting lots of veggies, fiber, and essential nutrients. I hope you love it too! Here's the recipe!

Loaded Sweet Potato Fries

Ingredients

3 lbs Sweet Potatoes
2-3 Tbsp Avocado Oil or Olive Oil
1½ tsp Chili Powder
Salt
Pepper
1 15-oz can Black Beans (or any beans you like), drained and rinsed
1 cup Cheddar Cheese, shredded (or any cheese you love)

Toppings

1 cup Grape Tomatoes, quartered
1 Avocado, diced or smashed
½ cup Greek yogurt or Sour Cream

Instructions

1. Preheat oven to 425° F
2. Peel the sweet potatoes, if desired, slice them into fries (slice them to the thickness you prefer), and place them in a large mixing bowl.
3. Coat the fries with oil and then season with salt, pepper, and chili powder, tossing in between seasonings.
4. Place in the oven at 425° F and bake for about 25-30 minutes, tossing halfway through (baking time will vary depending on the thickness of the fries). Once golden brown and crispy, remove from oven and set aside.
5. Place about 1 cup of fries onto an oven safe dish and top with beans and cheese. Place in the oven and bake until cheese is melted, about 2-3 minutes.
6. Add any toppings and enjoy!
