The most controversial pasta in my 3-ingredient series: butter, lime, and anchovies. Silky, briny, zesty, and impossible to stop eating.
Ingredients (serves 1):
Tonnarelli or spaghetti, 85g
Butter, 4 tbsp
Anchovies in oil, 4 for sauce + 3 for topping
1 lime, zest and juice
Black pepper, freshly ground
Light salt
Pasta water
METHOD
Boil water, light salt or none.
Melt 2-3 tbsp butter over low-medium heat.
Melt in 4 anchovies, stirring occasionally.
Add zest of half the lime.
Cook pasta al dente, save a cup of pasta water.
Add pasta to the pan, heat high.
Toss with pasta water until glossy.
Cook 1-2 more minutes, tossing.
Off heat, add remaining zest, a squeeze of juice, pepper.
Plate, top with the 3 remaining anchovies, extra zest and pepper.
Would you try this, or are anchovies a hard no for you? Let me know in the comments, I read every single one.
