Need an easy weeknight win? This crock pot white chicken chili is my dump-and-go dinner — chopped rotisserie chicken, three cans of cannellini beans, corn, green chilies, Rotel, broth, and a packet of white chicken chili seasoning all go straight into the slow cooker, and I don't drain a thing. It cooks on high for about four hours, then a block of cream cheese goes in for the last 30 minutes to make it rich and creamy. I made this batch solo parenting and in a hurry, so I used water and chicken bouillon instead of broth and skipped the red onion — and it still came out beautiful. I serve it with a pan of Jiffy cornbread on the side, warm with butter and hot honey, and everybody tops their own bowl.
