I’ve been eating tofu for nearly 20 years, and it’s still one of the ingredients I cook with the most. I love that you can completely change it depending on the flavors you pair it with, and this orange ginger tofu is a perfect example. This orange ginger tofu gets so much flavor from fresh orange juice, ginger, garlic, soy sauce, and a little heat from red pepper flakes. The tofu sits in the marinade and soaks everything up before going into the oven, and you can even let it marinate overnight if you want to prep it ahead. I usually keep the rest of the meal pretty simple and serve it with rice or noodles and whatever vegetables I have around. Tofu is still one of my favorite affordable plant-based proteins because there are a million ways to make it taste completely different depending on what you’re craving. If you think you don’t like tofu, I’m always curious: how was it prepared when you decided that?
