Italian Love Cake (cake mix recipe)

Ingredients:
• 1 box chocolate cake mix (15.25 oz)
• 1 tsp instant espresso powder
• 2 c milk, divided (room temperature)
• 8 eggs, divided (room temperature)
• ½ c butter, melted
• 32 oz ricotta cheese
• ½ c sugar
• 1 tsp vanilla bean paste or extract
• 1 container whipped topping, thawed (12 oz)
• 1 packing instant chocolate pudding mix (3.4 oz)
• ½ c shaved semisweet chocolate (optional)

Instructions
1. In a bowl combine cake mix, instant espresso, 1 c milk, butter, 4 eggs – mix until smooth. Cover bowl with plastic wrap and hydrate batter for 15 – 45 minutes.
2. Preheat oven to 350, grease 9x13 cake pan.
3. Make ricotta cheese mixture: In a separate bowl combine ricotta cheese, 4 eggs, sugar, vanilla – mix until smooth.
4. Spread cake batter evenly along bottom of 9x13 cake pan. Pour ricotta cheese mixture on top and spread evenly over cake batter. Bake in preheated oven for 1 hr 15 minutes.
5. Out the oven allow cake to cool and make frosting. Blend pudding mix and 1 cup milk until smooth, then fold in thawed whipped topping and chocolate shavings (if using). Spread over completely cooled cake.
