Pizza night just got a whole lot better. This is my first-ever Mediterranean pizza — basically your favorite Greek salad piled onto a crispy whole wheat crust, so my husband can have a guilt-free, Mediterranean-diet-friendly pizza night. I keep the crust crisp by spreading regular tomato sauce nice and thin, then layering on fresh mozzarella, thin red onion, halved Kalamata olives, and olive-oil-kissed cherry tomatoes. The secret is a homemade balsamic glaze — just balsamic vinegar simmered down with a touch of honey, no added sugar — drizzled over fresh basil the moment it comes out of the oven. Want the whole wheat crust recipe? It's on the website, linked below.
