This is how to make spicy Lebanese garlic cilantro potatoes— aka batata harra.

Ingredients:
- Potatoes
- Cilantro
- Jalapeño
- Garlic
- Lemon
- Salt & Pepper
- Olive Oil & Neutral Oil (for frying)

Step 1: Prep the Ingredients
Peel & cut the potatoes into small cubes before adding to a bowl of cold water. Soak for around 20 minutes to remove the excess starch.

Wash the cilantro and dice into small pieces— stems and all. Slice around the jalapeño to avoid the seeds before dicing into small pieces. Slice garlic cloves into thin slivers, and cut the lemon in half.

Strain the potatoes and pat dry with paper towels.

Step 2: Create the Dish
Preheat neutral oil in a fryer or pan to 350º. Drop the potatoes in for their first fry—around 5 minutes—remove, then rest for 8 minutes.

Add a little neutral oil and a little olive oil to a pan over medium heat. Add the jalapeños and sauté for 1 minute or so before adding the cilantro and garlic. Toss and sauté for another couple of minutes to marry the flavors.

Simultaneously, drop the potatoes into the oil for the second time and fry for 2 minutes. Remove them from the oil, and add directly into the sauté pan with the vegetables.

Immediately sprinkle with salt, pepper, and fresh lemon juice, toss, and serve.

To me, this is the ultimate comfort food, and takes me straight back to childhood. It's so nostalgic, incredibly flavorful, and pairs perfectly with almost everything.

If you give it a try, definitely let me know what you think.
