This Sunday meal prep is for busy families who want easy, homemade meals ready for the week ahead. These recipes are high-protein, family-friendly, make-ahead and freezer-friendly, with a mix of breakfasts, lunches and dinners.
We’re making Slow Cooker Marry Me Chicken, High-Protein Cottage Cheese Zucchini Slice, Chicken and Corn Soup, and Sticky Hoisin Beef using a strategic cooking order to save time.
Rather than cooking each recipe from start to finish, I’ll show you how I overlap cooking times so we can get four recipes done in around 2–3 hours. We’ll start with the Slow Cooker Marry Me Chicken because it takes the longest, then use its cooking time to prepare the Zucchini Slice and Chicken and Corn Soup before finishing with the Sticky Hoisin Beef.
What we're making:
1. Slow Cooker Marry Me Chicken
Add the chicken to the slow cooker with garlic, sun-dried tomatoes, Italian herbs, seasoning and chicken stock. Cook on HIGH until the chicken is tender and cooked through.
Remove the chicken and shred it, then return it to the slow cooker. Add extra stock and cream and stir to combine. Finish with plenty of grated parmesan, then cook on HIGH for another hour until the sauce is creamy and the chicken is coated.
