Hello friends, it’s Grandma Joan. Today I’m sharing one of my favorite budget-friendly meals that I’ve been enjoying for years. At 92 years old, I still cook for myself every day, and I’ve learned that simple meals can be some of the most satisfying. This easy ground beef, rice, and green pepper recipe reminds me of traditional stuffed peppers, but it’s much easier to prepare and much easier for me to eat.
I absolutely love green peppers. In fact, they’re one of my favorite vegetables. Years ago, I used to make classic stuffed peppers with ground beef and rice baked inside, but these days I prefer a simpler version. I sauté the green peppers, mix them with seasoned ground beef and rice, and create a delicious meal that gives me all the same flavors without the extra work. It becomes more like a stir fry.
In this video, I share how I prepare one of my affordable senior meals using ingredients I keep on hand from my monthly grocery haul. By cooking ground beef in bulk, portioning it into the freezer, and planning meals ahead of time, I’m able to stretch my grocery budget while still enjoying healthy, flavorful food.
In this video, we talk about:

• Frugal cooking for seniors
• Easy ground beef and rice recipes
• Green pepper recipes on a budget
• Stuffed pepper casserole ideas
• Cooking for one
• Budget-friendly meal planning
• Grocery budgeting on Social Security
• Freezer meal preparation
• Affordable comfort food recipes
• Healthy meals for older adults
• Simple living and frugal living tips
• Senior meal prep ideas
• How to stretch ground beef for multiple meals
• Living independently at 92 years old

I also show how I prepare my lunch tray using foods I’ve already cooked and portioned ahead of time. My steamed cinnamon carrots, frozen dark sweet cherries, rice, and ground beef all come together for a nourishing meal that costs only a $1.75 but tastes wonderful.
One of the secrets to living well on a fixed income is learning how to use ingredients wisely. I buy groceries only once a month, cook in batches, freeze leftovers, and make sure nothing goes to waste. Those habits have helped me eat well, save money, and maintain my independence for many years.
