My feed has been full of those creamy, spicy buldak ramen bowls lately, and every single one makes me want to run straight to the kitchen. They always look so glossy and comforting, with the soft egg, springy noodles, and that deep red chili oil swirling through the broth. But because packaged buldak ramen has more additives than we usually want in our kitchen, I decided to make my own version for all of the same cozy, spicy satisfaction.

This Korean-inspired mushroom ramen is creamy from real egg yolks and my homemade mayo, a little spicy from the @whitemausu black bean rayu, savory from the garlic, soy sauce and parmesan, and sweetened a little bit by the maple syrup and @wearesaitaku rice vinegar. I top it with buttery golden, soy-glazed mushrooms, soft-boiled eggs, scallions, and a little extra black bean rayu. It is rich, spicy, silky, and honestly just as craveable as the reels that inspired it.
