Here’s how I made it:
Heat a little oil in a pan and add garlic and green chilli. Sauté for a few seconds, then add peanuts and cumin seeds. Roast lightly and finally add fresh coriander. Cook for another minute.
Transfer everything to a mortar and pestle and crush into a coarse thecha paste.
For the dough, add 1 cup wheat flour (atta), 1 tbsp besan and 1 tbsp curd to a bowl. Add 1/2 tsp turmeric powder, chilli powder, ajwain, coriander powder, salt and fresh coriander leaves. Mix and knead into a soft dough.
Roll out a portion of dough and spread the thecha paste over it. Place another rolled-out layer on top and flatten gently. Cut and shape as shown in the video, then roll each piece to create the laccha effect.
Cook on a hot pan until golden, applying butter or ghee generously on both sides.
Spicy, flaky and flavour-packed Thecha Laccha Paratha is ready
